Green lentils are one of the earliest domesticated crops in the world. They have a brown/green colour and a rich earthy flavour. They are a great source of protein and fibre as well as many micro-nutrients including B group vitamins, manganese, phosphorus, magnesium, copper and zinc.
Green lentils have traditionally been used as a base for soups and curries and also make a great addition to salads.
Cooking tips:
- Before cooking thoroughly rinse the lentils to remove dust and other debris.
- Bring 3 cups of liquid (water, stock, etc.) for each cup of lentils to the boil, cover and simmer for about 30 minutes or until desired texture is reached.
- Green lentils will increase up to three times in size while cooking so ensure that a large enough saucepan is used.
- Do not season with salt until after cooking otherwise lentils will become tough.
